Water is as important as rice for sake brewing. Niigata is one of the most heavy snowfall areas in Japan, but the place where our company is located has a lot of snowfall. Our company is located right at the foot of the Echigo Mountains and draws abundant groundwater from it. Not only the water quality but also the climate (temperature, humidity, etc.) is important for sake brewing. At our company, we make sake using the water quality and climate blessed by nature. We cultivate the rice in the rice field behind the sake brewery, and we consistently handle everything from growing the rice to harvesting and polishing the rice.
