Onda Shuzo Co., Ltd. has been in continuous operation since 1875 in Nagaoka, Niigata Prefecture, with the fifth-generation owner Norio Onda also serving as the head brewer. The brewery cultivates its own sake rice variety Ipponjime in-house, and for the flagship Maitsuru Tsuzumi line produces only a few hundred cases annually from rice grown on a single hectare owned by the brewery. This careful small-scale approach reflects Onda Shuzo's priority of quality over volume, with the sake distributed primarily in the region and exported in limited quantities.
