A junmai ginjo from Uonuma, Niigata, brewed with Gohyakumangoku rice at 60% polishing and the ultra-soft snowmelt water from the brewery's mountain source. The resulting sake is light, delicate, and gently dry, with moderate acidity that gives it a wine-like approachability.
