Description

Yamada Nishiki polished to 40% is brewed in the long, low-temperature fermentation style at a Fukui kura that insists on traditional hand-crafting and locally sourced rice. Fukui's soft river water from the Asuwa basin rounds the palate, yielding an elegant aroma and fine-textured umami characteristic of a carefully made junmai daiginjo.
