Description

Brewed in Kakizaki, Joetsu, by a brewery whose roots trace to 1697 and which is home to the Kubiki Toji school of brewing, this honjozo namacho is lightly pasteurized once and stored cold to retain a fresh, lively character. The polishing ratio of 60% retains a moderate rice body, and local contracted-grown rice is used throughout.

Nigata
It is not necessary for the sake itself to make a strong assertion and become a protagonist, and I think that it is good to be a supporting role in cooking. We are aiming for such sake that can eat, drink a cup, and eat the next bite again. The ideal is to enhance the dishes, spin the hearts between people, and such sake brewing, and we will continue to work and commitment.
