Description
Polished to 55% from Niigata-grown rice, Komakoyuki is a ginjo brewed by the Echigo-toji tradition at Niigata Meijo, where soft Echigo water drives a slow, clean fermentation. The brewery has received gold prizes at the Wineglass Sake Awards, and the label reflects Niigata's signature fine-grained kokumi with a dry, lingering finish.

Echigo also produces rice that is famous all over the country and rice perfect for sake. Rice suitable for sake brewing, unlike rice for eating, is good for sticky, water -absorbing, large grains, and a white -white (white walnut in the center of rice grains). Echigo is proud of "Koshi Tanrei" as a rice suitable rice. This is a specially made sake rice, which is a contract cultivation for a farmer. Niigata's name is used to use the latest rice plant and polish and use this rice.
