Koinokawa Junmai Daiginjo Kameno is a premium pure-rice Daiginjo from Koikawa Shuzo in Yamagata, brewed with Kame-no-o, an heirloom rice variety nearly lost to history before its Shonai revival. At Junmai Daiginjo polishing levels, Kame-no-o expresses its distinctive earthy depth and complexity alongside the refined fragrance expected of the grade. The Koinokawa sub-brand gives this heritage rice expression a distinct identity within the brewery's broad portfolio.
