Hito Gokochi, the Nagano-bred sake rice known for its dissolved umami and clean finish, is polished to 70% and fermented with 30% koji rice ratio (sanwarikoji) in this junmai from Yukawa Shuzoten in Kiso, Nagano. The higher koji ratio amplifies the rice sweetness and builds a more textured, full-flavored sake.
