Gohyakumangoku polished to 55% undergoes yamahai fermentation in this ginjo from Urazato Shuzoten in Tsukuba, Ibaraki. The yamahai method without commercial lactic acid yields a sake aged for one year at sub-freezing temperature, producing a gentle, settled flavor.
