Tokubetsu honjozo from Gohyakumangoku at 60% polishing, brewed with Ogawa yeast and Tsukuba mountain spring water at this 1877-founded brewery. The Ogawa yeast contributes characteristic banana and melon-like top notes, while Gohyakumangoku's mineral umami and sharp dry finish make this a clean, food-pairing sake.
