Ginjo honnama from Yamada Nishiki polished to 50%, fermented with the Ogawa yeast that has been the defining element of this brewery's character since the 1980s. The Ogawa yeast's clean, low-acid profile produces transparent clarity and a delicate, dry, refined sake typical of the Tsukuba style.
