Kirei Junmai Ginjo from Kireishuzo in Hiroshima is a pure-rice ginjo brewed with rice milled to at least 60 percent and without the addition of distilled alcohol, allowing the natural character of the fermentation to drive the flavor. Hiroshima's famously soft water, low in mineral content, contributes to a round, smooth mouthfeel and supports the delicate, fruit-forward aromatics typical of ginjo-grade brewing. Kireishuzo, whose name evokes clarity and elegance, applies the soft-water brewing techniques historically developed in this region to produce a clean, approachable junmai ginjo.
