Kinogawa Taruzake from Kinokawa in Isahaya, Nagasaki, is aged in cedar barrels that impart a characteristic woody fragrance to the sake, polished to 75%. Cedar barrel aging is a traditional Japanese practice that adds aromatic depth and a distinct resinous character to the finished sake.
