Gifu
Founded in the first year of Bunkyu (1861). The sake name "Kinkazan" is derived from the name of a symbol of Gifu City. The sake inscription "Hinode Tsuru" is named with a congratulations "sunrise" and "crane". Sake brewing that is all hand -working, from rice washing to rice koji, without relying on machines.
