Kinkazan takes its name from Mount Kinkazan, the forested peak that rises above Gifu city and serves as an enduring symbol of the region. Adachi Shuzo draws on Gifu's clean mountain water and local rice to produce this label, which reflects the straightforward, food-friendly style characteristic of the area.

Founded in the first year of Bunkyu (1861). The sake name "Kinkazan" is derived from the name of a symbol of Gifu City. The sake inscription "Hinode Tsuru" is named with a congratulations "sunrise" and "crane". Sake brewing that is all hand -working, from rice washing to rice koji, without relying on machines.
