Adachi Shuzo was founded in 1861 in Gifu City, Gifu Prefecture, and named its flagship sake Kinkazan after Mount Kinka, the forested hill rising 329 meters at the heart of the city and crowned by Gifu Castle, a landmark long synonymous with the city's identity. Every step of the brewing process, from rice washing to koji preparation, is carried out entirely by hand, reflecting the brewery's commitment to traditional craftsmanship.
