Hinodetsuru is the flagship label of Adachi Shuzo, a small brewery in Gifu Prefecture situated among the mountainous terrain of the Hida-Mino region. Gifu's soft snowmelt water contributes a gentle mouthfeel, and this expression follows the brewery's traditional approach to everyday drinking sake.

Gifu
Founded in the first year of Bunkyu (1861). The sake name "Kinkazan" is derived from the name of a symbol of Gifu City. The sake inscription "Hinode Tsuru" is named with a congratulations "sunrise" and "crane". Sake brewing that is all hand -working, from rice washing to rice koji, without relying on machines.
