Description
Kinin is produced by Niseko Shuzo in Kutchan, Hokkaido, using locally grown Hokkaido rice. The brewery draws on soft water from Mount Yotei, the volcanic peak of the Niseko region, and pursues a style that emphasizes clear, umami-rich flavor without added water.

Niikyo Sake Brewery, founded in Taisho 5, is a sake brewery that sticks to "raw sake that does not adjust water", "water", "air", and "environment". The water uses the Niseko Wis Mountain Snow Shimizu and the "sprouting water" from Mt. Yotei. The warehouse is located in a heavy snowfall area suitable for low -temperature fermentation. We also use a lot of Hokkaido rice, and we also make liquor using Gin -style in Fukagawa, now gold comets, gin -wind, and the first drop of republic.
