Kikutaka Junmai Ginjo Yume Ginga from Fujiichi Shuzou in Inazawa, Aichi, uses Yume Ginga, Aichi Prefecture's proprietary sake rice, polished to 60% under the philosophy of toji Katsuaki Yamamoto, who elevated this brewery to national recognition through meticulous koji technique. Brewed with Kiso River subsoil water at this 1870-founded brewery, the Yume Ginga rice imparts an elegant fragrance and rounded depth suited to a food-focused junmai ginjo.
