Kikutaka is the revived label of Fujiichi Shuzo, founded in 1872 in Inazawa City, Aichi Prefecture. Toji Katsuaki Yamamoto relaunched the dormant brand name in 2012 with a philosophy centered on maximizing umami and acidity through meticulous koji work, matching yeast to rice variety based on each year's harvest quality. The brand became highly regarded for its bold, full-bodied style before production ceased following Yamamoto's departure from the brewery.
