This Kawatsuru Junmai uses Tamasakae rice from Shiga Prefecture milled to 70%, bottled muroka (unfiltered) with a single bin-kan (warm bath) pasteurization for gentle heat treatment. Tamasakae is a rice variety with a rich, hearty character, and the light polish at 70% allows its full grain expressiveness to come through in this Kagawa sake.
