Kawatsuru Daiginjo is milled to 40% at this sixth-generation Kagawa brewery, which sources rice principally from contract growers in the Sanuki region and brews with soft water from the Zaita River. The brewery's daiginjo lineup has received silver medal recognition at international competitions.
