Miyama Nishiki at 65% polishing forms the base of this low-alcohol sparkling nigori sake from Shusenkurano in Kawanakajima, Nagano, designed to be served in a champagne glass. Creamy and smooth with gentle carbonation, it draws on the same Kawanakajima nigori base character, adjusted for a lighter and more effervescent presentation.
