Wood-barrel fermented muroka nama genshu produced under the Kanetamaru label, where the sole variable versus the standard stainless-tank brew is the wooden barrel itself. Ki-oke fermentation imparts a subtle woody complexity and soft texture to the otherwise unfiltered, unpasteurized, undiluted sake.

Koyama City, which was blessed with the underground water of the Nikko Mountains, was a delicious rice -producing area, and has been around for a long time. Even today, there are five sake breweries in the city, which offers high quality local sake. Wakakoma Sake Brewery is one of them, and was founded in 1860 (1860). It is the oldest sake brewery in Koyama City, a tangible cultural property of the country.
