This nama junmai ginjo is fermented with a special yeast strain that limits alcohol development, keeping it undiluted yet mild at around 14 percent ABV while staying intensely aromatic. Expect ripe, tropical fruit notes of banana, mango and kiwi that land soft and plush rather than sharp. It reflects Kochi's tradition of prefectural yeast research, producing a uniquely fragrant style.
