Brewed with a proprietary yeast strain that made a research trip to both outer space and the deep sea, this junmai daiginjo genshu opens with a firm, earthy intensity before revealing warm chestnut tones. Medium bodied and nearly dry, it balances weight with elegance and carries a subtle nuttiness through to the finish. As a genshu, it is bottled undiluted, giving it more concentration than a standard release.
