Kajoukotobuki Junmai Daiginjo is a pure rice daiginjo from Kotobuki Toraya Shuzo, representing the top expression of the Kajokotobuki brand's no-added-alcohol commitment. Daiginjo polishing removes at least half of each rice grain, concentrating the core starch for a clean, aromatic fermentation. The Kajo Castle namesake connects this prestige sake to Yamagata's centuries-old cultural and brewing history.
