Daiginjo brewed from Kairyo Shinkou, a near-vanishing heirloom sake rice that the brewery revived through dedicated contract cultivation in Kahoku-cho, Yamagata, polished to 40%. The rice's deep, expressive umami and a graceful ginjo aroma come together in a flavor-forward daiginjo with a clean finish.
