Junmai brewed from Dewa Sansan rice polished to 60% in Kahoku-cho, central Yamagata, where the brewery has cultivated this region's sole sake-specific rice variety for generations. Soft water from Mount Gassan supports a fine-grained, clean umami character that earned recognition at the Wineglass de Oishii Nihonshu Award.
