Junmainigorizake Kajokotobuki Namazumeshu is a cloudy junmai from Kotobuki Toraya Shuzo, pasteurized once before bottling in the namazume style to balance freshness and stability. The nigori character comes from lees left in the sake, giving a creamy texture alongside the pure rice flavors. This Yamagata sake occupies the middle ground between the fully raw namasake and twice-pasteurized versions.
