Junmai Ginjo Ryouguuzan

Junmai Ginjo Ryouguuzan - Junmai Ginjo sake from Akaiwashuzou Kabushikigaisha, Okayama
Description

Ryouguuzan (両宮山) is a forested hill in Akaiwa City, Okayama, located near two Shinto shrines whose combined presence gives the mountain its name, meaning Two-Shrine Mountain. Akaiwashuzou named this junmai ginjo after that local landmark, rooting the sake firmly in the immediate geography of its brewing district. Polished to 55%, the rice sits at a mid-point between the finer ginjo polish and earthier junmai character, producing a sake with quiet structure and balance. Okayama's access to the heirloom Asahi cultivar and warm Setouchi growing conditions give the brewery a natural foundation for building terroir-expressive sake at this grade.
