A spring shiboritate junmai daiginjo bottled from 100% Bizen Omachi, the ancient heirloom rice variety revived in Okayama, milled to 50%. The Omachi rice contributes its characteristic soft, voluminous body with natural sweetness and an interplay of acidity and umami.
