Joshen table sake brewed with Omachi rice at 70% polish at Okayama's oldest brewery, founded in 1688 and using the region's celebrated Omachi Reisen spring water listed among Japan's 100 famous waters. Upper-tier expressions from this kura use exclusively local Akaiwa-grown Omachi, known for its rich, layered umami.
