Milled to 75 percent, this josen-grade sake from the Kumamoto brewery founded in 1752 is brewed using underground water from the Kikuchi ravine system. The brewery adheres to the foundational sake-making tenet of ichi-koji, ni-moto, san-zukuri, applying careful hand-crafting through each stage.
