Crafted in Shimane Prefecture using the traditional kimoto method, in which the yeast starter is hand mixed in wooden vats over a process that takes about three times longer than modern brewing. Made from 100% Sakanishiki rice polished to 45%, as denoted by the S45 in its name. Expect a light aroma with a creamy, smooth texture, effortless elegance, and a touch of acidity on the finish.
