Description
Hida Homare rice polished to 55% forms the base of this nakagumi-only junmai, drawn exclusively from the prized middle portion of the pressing tank and bottled by hand without filtration as a nama genshu. Bottling with settled lees gives a white, full-bodied pour, while carefully decanting the clear upper layer yields a delicate, feminine character — two distinct drinking experiences from a single bottle.

「なか」とは、品評会に出される一番おいしい部分です。また「なか」だけを汲み取ることは、非常に手間のかかる作業のため、本来は大吟醸などの超高級なお酒だけでしか使用されません。しかし、年一回の蔵まつりにいらっしゃるご来場者様に「おいしい部分だけを飲んで頂きたい!」そんな蔵元の思いから、あえて「なか」だけを取り出し、無ろ過生原酒のまま手詰めしました。Original text from the brewery, in Japanese.
