Description

Yamada Nishiki polished to 45% is fermented with M310 yeast and released as muroka nama genshu in the W series, where identical brewing conditions across multiple rice types let the rice speak clearly. The result is dense tropical-fruit and honey aromas, a rich umami sweetness, and a clean finish that tapers with fine acidity.
