Hida Homare at 67% polish forms this summer nigorizake, which begins as a freshly brewed February nigori before heat treatment, dilution, and low-temperature aging. By summer, the initial rough character softens into a milder, sweeter profile with a sake meter of -15 and 15% alcohol, designed to be served on the rocks.
