Honjozo Zuihotatsuizumi uses Hana Fubuki rice polished to 65% from Tatsuizumi Shuzo in Fukushima's Aizu region. Hana Fubuki is an Aizu-area sake rice that produces a clean, well-rounded character; the zuiho (auspicious phoenix) label represents one of the brewery's honored everyday expressions.
