Tatsuizumi Daiginjo Kyonohana uses a revived heirloom sake rice named Kyonohana (Kyoto flower), polished to 40%, from Tatsuizumi Shuzo in Fukushima's Aizu Wakamatsu. Originally from Yamagata and extinct by 1950, Kyonohana was revived through the brewery's collaboration with local farmers in the 1980s; it has since earned seven National New Sake Appraisal gold awards, producing a daiginjo with an intense, spreading aroma and a vivid, melting finish.
