Description

Honjouzou Wakamidori Tarudume from Iiyama Shuzo in Nagano is a cask-stored (tarudume) honjozo in which the sake has been aged in cedar barrels, developing the characteristic toasty, resinous, and woody aromas that define taru sake. The Wakamidori brand represents the brewery's fresh, approachable style, and the tarudume process adds a distinctive aromatic layer that sets this expression apart from the standard pack and bottle versions. Cedar aging is a traditional Japanese technique that was historically common and is now preserved as a specialty style by select breweries.
