Description
Hiyaoroshi Junmai Ginjo Homarefuji is an autumn-release sake from Hamamatsu Shuzo in Shizuoka, brewed with Homarefuji, the prefecture's original sake-brewing rice, and fermented with Shizuoka-native yeast strains such as SY103. Hiyaoroshi is stored through summer after the first spring pasteurization, then bottled in autumn without a second heat treatment, delivering a mature roundness. The seasonal timing and single-pasteurization process produce a smooth, aged character with Homarefuji's characteristic mild sweetness.
