Gohyakumangoku and Yamaboushi rice polished to 80% give this junmai a robust, grain-forward character fermented with Kyokai No. 8 yeast, which was revived by the brewery in 2023. At 80% polish the sake retains more of the rice's outer layers, producing a rustic, full-bodied profile with pronounced umami and depth.
