Named after master brewer Kusaka Shinji, with the meaning that no sake in the world can rival it, Hinoshitamusou is produced by Amabuki Shuzo in Saga Prefecture. The brewery prioritizes raw material preparation above all else, using two separate yeast strains fermented in individual tanks and maintaining meticulous temperature management at every stage. Hong Kong Sake Awards 2021 awarded its kimoto-style junmai gold in the junmai category.
