Description
Kinmon Nishiki, a rare Nagano heirloom sake rice bred from Takanenishiki and Yamada Nishiki, is polished to 59% for this yamahai-method junmai brewed in wooden casks at Obuse's 1755-founded kura. The wood-fermented, kimoto-adjacent approach produces a quietly deep character with restrained sweetness and a dry, sake meter value +11 finish.
