Hachikoku Tokubetsu Honjozo is a special-designation honjozo from Hayashi Sake Brewery in Kashiwazaki City, Niigata, using rice polished to 60% in accordance with the tokubetsu classification. A small added-alcohol honjozo brewed in the Niigata tradition of clean, food-compatible sake, it balances restrained acidity and modest sweetness with a crisp, dry finish.
