Description

Yamada Nishiki polished to 38% is used in this fukuro-tsuri tobintori daiginjo from Aoki Shuzo in Ibaraki, under the Gokeiji label. The fukuro-tsuri (bag-hanging) method allows gravity to draw the finest drops without pressure, producing an exceptionally delicate sake.
