Description

Junmai ginjo brewed from 100% Hyogo Yamada Nishiki polished to 60%, fermented using spring water from the Seppiko mountain system without any mechanical temperature control. The sake shows grape-like fruit notes and firm acidity alongside a clean rice umami; it won gold at the National Hot Sake Contest in 2014, 2016, and 2017.
