Yamada Nishiki polished to 40% forms the foundation of this ginjo from Yamadashoten in Yaotsu, Gifu, a brewery that has earned consecutive gold medals at the National New Sake Competition. The sake is hand-crafted by Toji Uno under the brewery's signature small-batch, low-temperature fermentation approach.
