Ginban Daiginjo Bizen Omachi uses Omachi rice from Bizen, Okayama, the birthplace of Japan's oldest sake rice variety, polished to daiginjo standards at Ginban Shuzo in Toyama. Tateyama snowmelt water and Omachi's inherent earthy depth produce a daiginjo of unusual weight and complexity, distinct from the lighter Yamada Nishiki style.
