Description
Junmai made from Yamada Nishiki grown under Shomei natural agriculture at the brewery's own fields in Yabu, Hyogo, polished to 60% and fermented without added alcohol. The naturally cultivated rice, dense and slow to ferment, produces a sake with rich umami and a slightly full-bodied palate recognized as a Yabu City regional brand product.

Since 1998, we have been working on the cultivation of Yamada Nishiki by natural farming (pesticide -free, no fertilizer, and self -seeds). The pure rice sake made from Yamada Nishiki is used as a "couple cedar natural rice sake".
